It will bring your iPhone back to the last backup situation, so some of new data after this backup will be removed. So you should be careful to determine to restore directly in iTunes or extract your data from backup with data recovery software.
Restore data directly from iTunes
Connect your iPhone with computer and run iTunes on your computer. Click the phone icon, then you can find Restore button on the right side. Click that button.
iTunes will list all the backups that you can restore from. Choose the backup that you need to continue.
How to extract data from iPhone backups?
If you do not want to iTunes backup overwritten your existing data on iPhone, you can choose to extract data from iTunes backups. To achieve this, you should use a data recovery software to extract the data from backup. This way also apply when your iPhone is damaged or lost.
Check your iTunes backups in your system drive to find your iTunes backups in this path: Computer>System>Users>Administrator>AppData>Roaming>AppleComputer>MobileSync>Backup. If you can see the backup, you can start your recovery.

Then you have successfully extract your data from iTunes backup. Open the recovery folder, you can copy the data to your devices.
Remember to back up your iPhone regularly, or you have no way to retrieve your data after you lost iPhone or the deleted data have been overwritten. And you’d better keep the iTunes backup store on your computer for future recovery.
